Vegetable Soup For Days

Vegetable Soup also known as Edikang Ikong or Efo riro like most nigerian foods is one that can be made in so many different variations.
One common denominator however is that it must contain a generous amount of fresh leafy vegetables, goat meat, palm oil and all sorts of animals protein.

Hi, Its your not-so-regular foodie Joyce and I welcome to this week’s episode of foodie’s corner. This is one of the most common and healthiest food eaten across Nigerian and even Africa.
one of the core vegetables used in preparing this dish is commonly called Ugwu leaves (also known Fluted pumpkin leaves) is a dark green leafy vegetable that is native to West Africa.
These leaves are a nourishing and excellent source of Vitamin A, folate, and calcium. They also help to reduce the risk of some types of cancer.
They help Lower blood pressure and naturally boost the immune system. In addition, they can improve blood production and aid in weight loss.

Today, I would be showing you all how to prepare it in vegetable soup.

Ingredients you would Need:

1 small cup of palm oil
3 big bunches of ugwu leaves
2 big bunches of water leaves
6 big cuts of Chicken/Beef/fish
1 cup of periwinkle (Washed and Cleaned)
1 spoons of Iru(Fermented Locust Beans)
1 onion bulb
1 medium sized dried fish
1 Stock fish head ( dried Cod fish)
1 cup of grounded crayfish
8 Scotch Bonnets(Fresh Pepper)
Dried Pepper
2 Bullion Stock Cubes
Salt

  1. Clean and Wash your meat thoroughly, set to boil with onions, buillon cubes and salt.
    Cook till the meat is very tender.
  2. Clean the stockfish with hot boiling water then add to the meat on fire.
  3. Cut the vegetables in small strips, rinse the vegetables in cold water and keep in separate bowls.
  4. Pour hot water into the bowls to soak the leaves for at least 3 minutes, then sieve out the leaves.
  5. Rinse the leaves again thoroughly to remove sand particles.
  6. Prepare a pepper and onion mix then fry in palm oil for 4 minutes stirring continuously.
  7. Drain the boiled meat/fish Combo and add to the frying mixture, set meat stock aside for later.
  8. Add the Washed vegetables and cook for 5 minutes.
  9. Add some of the Stock back to the soup.
  10. Add the grinded crayfish, periwinkles, locust beans (Iru) and stir.
  11. Leave to cook for additional 3 minutes
  12. Turn off the heat and allow it to cool off.

Your Delicious Soup is now ready to be served with the swallow of your choice or even Rice, Yam and plantains.
