T’is The Season Of Jollof

Hi there, it’s me again 🥰🥰🥰 Joyce From Foodies Corner and I’m back this week with another mouth watering recipe.

This time around we would be looking at the Delicious “Jollof Rice”

I believe it’s safe to say that this meal is an African Citizen 😅

Although the recipes vary from country to Country, Jollof Rice is a popular dish eaten in African countries such as Nigeria, Ghana, Cameroon, Liberia, Mali, Togo, Gambia, and Côte d’Ivoire

On a lighter note, there is even slight rivalry between Nigeria and Ghana over which variation of the meal tastes better.

Jollof rice is typically eaten with quite a number of side dishes such as fried plantains, vegetable salad with cream, coleslaw, and moin moin (bean pudding) and or with addition to animal proteins such as beef, chicken, turkey, or fish.

Today, I will be teaching you all how to cook Jollof Rice the Nigerian way😅

Ingredients you would need
for approximately 6 servings

-6 medium tomatoes, sliced
-1 red bell pepper, stemmed, seeded and quartered
-2 small red onions, 1 quartered, 1 diced
-1 scotch bonnet pepper, or habanero, stem removed
-1 cup vegetable oil(120 mL)
-1 lb boneless chicken or any other animal protein of choice, washed and cubed
-2 teaspoons curry powder
-1 teaspoon dried thyme
-2 cups parboiled long grain rice(400 g), washed

2 stock cubes
2 cups of Meat Stock or 2 cup water(180 mL)

Preparation

Add the tomatoes, red bell pepper, quartered onion, and pepper to a blender and blend until smooth.

In a pot over medium heat, add 2 tablespoons oil, diced red onion, chicken, and curry powder. Cook until onions are soft and chicken has browned, about 8-10 minutes.

Remove chicken from pot and set aside.

Raise heat to medium-high, and using the same pot, add pureed tomato mixture, cooking until reduced by half.

Stir-fry sauce for 8-10 minutes.
Stir in chicken, along with washed and parboiled rice, stock and thyme leaves.

Cover pot tightly with foil.

Cover with lid and reduce heat to low, cooking for 30 minutes.(you can choose to add finely chopped veggies of your choice at this point)

Once rice is cooked, fluff up by stirring gently before serving.

Enjoy while it’s hot!
