I’m back again with my yummy Foodie Fridays Recipe and today we would be learning about the healthy gem that is Boiled Plantain with Egg Sauce
Boiled green or half ripe plantains is a dish that’s eaten in various forms throughout Africa and even in South America. It can be eaten mashed and served with gravy or pounded and served with vegetable soups. Today’s recipe however is the famous nigerian boiled plantains served with a delicious sauce made with eggs, tomatoes, carrots onions etc
Plantain and egg sauce is very tasty and adds a new twist to the yam it is quite often served with.
This meal is also very healthy as its packed with the six classes of food and the plantains are full of potassium and other minerals. Plantains contain more fiber than bananas, making them a great food to eat for those with digestive problems.
Plantains also include magnesium, which is necessary for blood pressure control, as well as calcium absorption and osteoporosis prevention. It also aids in sleeplessness, migraine relief, and depression treatment.
Eggs on the other hand are packed with protein, vitamin A, vitamin B2, B12, vitamin D, folate, and iodine, among other nutrients. The vegetables added are also a great source of fiber, magnesium and other vitamins.
So….. Let’s get into the recipe shall we?
Ingredients
3 or more half ripe plantains
3 eggs( raw)
4 Fresh pepper
2 big tomatoes
1 medium-size onion
3 large carrots
1 medium green pepper
Seasoning cubes to taste
1/4 teaspoon curry
2 cooking spoons Vegetable oil
Salt to taste
( you can choose to add more veggies of your choice, just make sure to balance the ingredients appropriately)
Instructions.
Cut the plantain into any desired size and peel the skin.
Place in a clean pot, add little water and boil the plantain until it is soft ( flip it to ensure even cooking)
Remove from heat and set aside.
Next wash and dice your fresh tomatoes, onions, carrots and peppers then set-aside
Next bring vegetable oil to heat in a frying pan and stir in your onions.
Stir fry for 30 seconds then add in all the diced vegetables.
Fry continuously for about 3 – 5 minutes.
Break eggs into a deep bowl whisk properly and pour into the pan, stirring gently in a circular motion and allow to fry for additional 3 minutes.
You can choose to break up the egg clumps further with a fork.
Add your seasoning cube, curry or other spice of choice and then add salt to taste.
Your delicious food is ready to serve.
This meal is not only very easy to prepare but it’s really delicious with every bite.
